Ginger appears to be effective at reducing the day-to-day progression of muscle pain, and may reduce exercise-induced muscle soreness. Ginger is high in gingerol, a substance with powerful anti-inflammatory and antioxidant properties. It can also prevent various types of nausea! It’s such a great tuber to add to your diet.
I’m always finding creative ways to add ginger to my diet. Today, I grated it and made a dressing for this salad. Recipe below! (Serves 3)
Ingredients:
1 tbsp grated fresh ginger
2 tbsp olive oil
1/2 tbsp white wine vinegar
1 tsp aged balsamic vinegar
Black pepper to taste
My salad include: Kale, broccoli, radish, cucumbers, cherry tomatoes, and bell peppers. You can pretty much add any types of your favourite vegetables to the salad.
Tip for the kale: remove the stems, chop them thinly and always massage it kale with sea salt until the leaves are soft before adding the rest of the dressing.
