Cubed Veggies Mason Jar Salad

Step 1: Make the dressing (5 servings)

Ingredients and Directions:

  • Whisk together in a bowl the following:
  • ½ cup of white wine vinegar
  • 2 tbsp of Dijon mustard
  • Salt and pepper to taste
  • 1 tbsp of EVOO

Step 2: Cook the ground turkey meat

  • 1 kg (2.2 lbs) of lean ground turkey
  • ½ tbsp of cooking oil ( I used coconut oil)
  • 1 tbsp of cumin
  • 1 tbsp of paprika
  • 1 tsp of cayenne pepper
  • 1 tsp of chili flakes
  • 1 tsp of garlic powder
  • 1 tsp of ground thyme
  • Salt and pepper to taste

In a large skillet, on medium heat, add cooking oil and then the ground turkey once the skillet is hot.
Cook until 90% done with a little of pink still left. Remove excess water, if you have any (see pic above).
Lower the stove to low (I used 2 on a scale of 1-10 for heat), then place the skillet with the turkey back on. Add all of the list above. Keep stirring until cooked thoroughly. Set aside and let it cool.

Step 3: Chop all of the veggies below then start layering the jar (1 litre jar)
Ingredients per jar (from bottom to top):

  • 1/8 cup of dressing (see above for ingredients and direction)
  • ½ a romaine tomato diced
  • 1 cup of diced raw celery
  • ½ cup of diced raw carrots
  • 1 cup of diced raw zucchini
  • 1 cup of turkey meat seasoned, cooked and cooled.
  • 1 handful of parsley

Step 4: ENJOY!
I like to serve mine cold. Just shake it up and eat it right out of a jar or pour it out into a big salad bowl and enjoy! You will need to eat this with a spoon!
